First of all, welcome to the Collabora Online forum!
From a technical perspective, there is nothing fundamentally preventing the Android app from being built on macOS. The native code needs to be cross-compiled for Android regardless of the host platform, so in principle building on macOS should be possible as well.
The main challenge is that this workflow hasn’t really been tested yet. If you decide to give it a try and run into issues, any fixes or improvements you can contribute would be greatly appreciated.
