I’m trying to protect cells by clicking Format - Cells and then click the Cell Protection tab.
But this doesn’t work. So I read the helpguide in ‘Collabora Help’ and is instructed to go to the Tools - Protect sheets menu to protect the whole sheet, but there is no entry in my Tools menu.
How can I solve it? Are there any external applications?
What the Tools menu should look like: tools1 — ImgBB (I guess)
How is my Tools menu: tools2 — ImgBB (Strumenti = Tools)

Your observation is correct.
Cell protection is respected, but the UI to turn it on/off, needs to be added…

You can activate Sheet protection on desktop only currently. And that will work online.
