Quick question: I see that Draw is part of the Collabora suite but I don’t see it anywhere in Collabora Office. Am I missing something?

Yep. Its part of the suite. You should be able open draw(odg) files

I’ve been able to open odg files but it opens with Presentation/Impress. I use the flatpak version. Is it possible to open Draw to create a new odg document?

Collabora Office for Desktop is our very first desktop release, and at this stage Draw is not yet available. The application is still evolving and is not yet fully ready for production environments.
