I have a problem setting the default dictionary to german in my editor, I am not quite sure how to do it and I did not find documentation for it.

Hi, there is no default dictionary. There is the document language, and it will be German if you create the file with the language of the integration you are using set to German (assuming you use one of the publicly available, familiar integrations like the one in Nextcloud or ownCloud).
