It is possible to run more than one Collabora Office app on a device, on a Chromebook it could be the Android app, the flatpak Linux app, or the Linux app, it would be useful to say which is running in Help > About, if it is potentially an Easy enhancement, should I add it to Issues? Also, they all have the same name and icon in the launcher - but this is OK, and as expected

Good idea - please do file it on Issues ยท CollaboraOnline/online ยท GitHub. The About dialog for the apps is shared code in the online repo, and it already knows internally whether it is the Android, iOS, Windows, macOS or Qt/Linux app (it even knows when the Android app is running on ChromeOS), so showing that in Help > About is a small, well-contained change and a good candidate for an Easy hack.
The one part that needs a little extra plumbing is telling the flatpak build apart from the native Linux build, since that has to be detected in the app process and handed to the UI. And yes, https://gerrit.collaboraoffice.com/c/online/+/12253 is related in spirit - it adds the build number to the version shown in About so a snapshot can be traced to a commit - so linking it from the issue makes sense.
