In the “insert” menu the “PAGE NUMBER” item is not translated into Italian.
The translation would simply be “Numero di pagina…”.
The window that opens is also not translated… if you need help I’ll be glad to help in translation.

I’m betting it would already be fixed in the next release.
Was probably just a hickup in grabbing+merging the latest version of Italian files. (A similar situation happened with Brazilian Portuguese a few weeks ago! 1 version later, it was fixed!)

Both LibreOffice + Collabora Online use “Weblate” for translations.
For Collabora Online:
It’s currently ~94% translated.
(I think it’s just missing a description for the Italian app store.)
For LibreOffice:
I think Italian is 100%(?) completed, but the localization team could probably use some extra help too.
